Andy's Beef Noodles

I grew some cilantro (고수) recently, so I thought it was time to put them to use.

Here's my beef noodle soup. =)

Spinach goes really well with this dish. So, I usually throw in some spinach when the noodles are almost ready.

I sliced some cilantro and green onions. The flavors are great together in this soup.

That's the finished product. See the big pieces of beef? That's shank or 사태. I cooked the beef for about 5 hours on low heat until the beef was tender. I also added some carrots. There are a lot of ingredients in this soup. In addition to carrots, I put in the following ingredients: star anise, Szechuan pepper corns, carmelized sugar, salt, pepper, cloves, sesame oil, mushroom sauce, fish sauce, red wine, onions, ginger, and garlic. Once the beef and noodles were ready, I sprinkled the green onions and cilantro on top. Ideally, I'd like to have some beef tendon or 힘줄 in the soup.
